1 1/2 pound (two packages) Impossible Ground Meat
1 cup torn-up pieces of day-old country-style bread, crusts removed
1/2 cup milk
1 small yellow onion, peeled
1 tb olive oil
2 garlic cloves, peeled and pounded to a paste with a pinch of salt
1 tb chopped fresh oregano
1 tb chopped parsley
a pinch of cayenne pepper
1 egg, lightly beaten
1/4 cup grated Parmesan Cheese
Salt
Fresh-ground black pepper
0. Preheat oven to 450, or choose to use cast-iron pan.
1. Season meat with salt and black pepper
2. In a small bowl, combine bread pieces and milk. Set aside to soften.
3. Grate the yellow onion. This will make a sort of rough puree.
4. Squeeze most of the milk out of the bread, and put it in a large mixing bowl with the meat and grated onion.
5. Add the spices, olive oil, garlic, egg, and parmesan cheese. Combine with your hands, gently but thoroughly.
6. Fry a small meatball and taste, adjusting spices to taste. If dry, add a little milk. (The mixture should be soft.)
7. Gently form into meataballs.
8. Bake for about 6 minutes, or pan-fry, turning occasionally for even browning.
